One of our favorite salads…
BLT Salad! 🙂
Inspired from Fresh Flavors Fast Cookbook from Martha Stewart Everyday Food…but mine is waaaaaay better.
1 package of thick cut peppered bacon
half baguette (8 ounces), sliced into 3/4 inch cubes about 4 cups
salt and freshly ground black pepper
1/3 cup buttermilk
3 tablespoons mayonnaise
2 tablespoons apple cider vinegar
1 small bunch of green onions, trimmed and thinly sliced
1 pound romaine hearts, coarsely chopped (or other salad greens)
1 pint cherry tomatoes, halved
Preheat your oven to 375 degrees. Arrange your bacon slices on a cooling rack placed inside a rimmed cookie sheet. Bake your bacon for 20 minutes (more or less, depending on how crispy you like your bacon- I have been known to turn my bacon over halfway through so it will get nice and super-crisp). When your bacon is done, crumble it up, and toss your cubed baguette with the bacon grease. Place the baguette cubes on the cooling rack and bake for 10 minutes or so until nice and crunchy.
While your croutons are um…crisping, quarter your tomatoes…
Toss it (this is where you wish you had my fancy salad tossing thingies)…
That's Mike's serving. I prefer to get the last serving so it's drowned in dressing and I get all the extra bacon and tomatoes. 😀
